Fast bean meatballs recipe
Ingredients:
300 g dried white beans
1 bun soaked in water
flour or breadcrumbs
oil
chopped parsley
parsnip
carrot
onion
Bay leaves
garlic
salt and pepper.

Method of preparation:
The beans are left to soak in a pot of water to boil gently. The next day it is boiled together with a parsnip, a carrot, an onion and a bay leaf. After the beans have been cooked, they are put through the grinder or mashed. The bean paste is mixed with a bun soaked in water and 2 cloves of crushed garlic. Add salt and pepper to taste and knead very well. The meatballs are then rolled in flour or breadcrumbs and fried on both sides in hot oil. Sprinkle chopped parsley over the meatballs and serve warm.
